Yesterday for the first time Walter, the chef and owner of Parco Di Clitunno, an amazingly romantic fish restaurant with its own small lake and ducks, cooked a cheese omelette for Laurie. It tasted good, if a bit lumpy ! He said that for an Italian, a cheese omelette is unheard of because nowhere in Italy has a mama or a nonna ever cooked one. Cheese omelettes are just not part of the Italian tradition. And, ALL good ITALIAN food MUST have a traditional history.
